Cherry Vanilla Protein breakfast triangles

Nowadays, a common misconception is that all tasty things are bad for your health. For a small period of time I also believed in this and “chocolate” was a dirty word because I wanted to achieve my body goals so bad.

However, recently I realized that this was not what we should do. We should LOVE food and whenever we take a bite- an explosion of tastes and emotions should be happening in our mouths.

This recipe came one day when I wanted something sweet, tasty, delicious and in the same time boosting for my workouts. So, it had to have carbs, fats and protein all in once.

I was looking for inspiration in different cookbooks and websites and finally made a modified all-in-one recipe:

I put 2 bananas because they make the baking texture better, 120g cherries- for color and sweetness (mine were frozen but it will work with fresh too). Moreover, you can do it with raspberries, blueberries, strawberries- whatever you prefer. I particularly chose cherries because I had them in my freezer.

Next, I added 225g rolled oats. I used Quaker traditional oats, because I like their texture and how they make the perfect morning porridge. I blended all these ingredients in order to have smoother paste.

After that, I put 175ml Vanilla Almond Milk with Honey (Pip & Nut), smooth peanut butter (Meridian), agave nectar– I chose rich and dark, and Vanilla whey powder. Again- blended everything and right when I was ready to put the mixture into the baking tray, I realized that I have some stevia-sweetened dark chocolate left. As you may suppose- I melted some and included it in the mixture.

Then, I greased the baking tray with coconut spray and put it in the oven for 25-30 minutes. However, beware the temperature and if you see that it gets brown quicker than expected- just cover it with baking sheet so you can prevent the burning. This way it will bake perfectly in the middle.

To be honest, if I have to make some alterations the next time I make this recipe- I would put some raw nuts and more protein powder in the mixture. It will be a perfect post-workout snack and the nuts are alwaysss a great choice when it comes to baking.

What is more, if you are not struggling with the “more protein” part, you can always skip it and instead you can put some raw cocoa powder for more chocolate taste.

  1. Put the 2 bananas, cherries and rolled oats in a food processor.
  2. Blend until smooth.
  3. Put the nut milk, smooth peanut butter, agave nectar and whey powder into the mixture.
  4. Blend again.
  5. Melt the dark chocolate in a microwave and add it to the other ingredients.
  6. Grease a baking tray with coconut spray.
  7. Put the mixture in the tray and bake for approximately 25-30 minutes.
