Peanut and Oat Flour Pancakes

I have always loved pancakes (like every person on the planet), especially my grandma’s pancakes which she made with yeast. I don’t know the recipe, but these were the best pancakes I have ever tasted in my whole life. However, as I started growing, I realised that I don’t quite enjoy the normal pancakes, because I felt so bloated after eating a dozen (oops). And since I bought peanut flour, I’ve been looking for ways to use it and trying it out in pancakes didn’t turn that bad at all.

Peanuts and Oat Flour Pancakes

These mini pancakes are packed with protein and they are really light, which means you can eat at least 10 😉 I actually ate the whole batch. So, the recipe is for a single-serving, but you can always double or tripe it if you want to make a family breakfast.

So, what else is so good about these? Let’s see… They are satisfying, protein-packed, easy, gluten-free, low-carb and not that high in calories, so if you are trying to cut down your calorie consumption- here is the perfect way.

The recipe is pretty easy to make, it’s like you’re making regular pancakes, just keep in mind that you’d probably have to wait a bit in order to get a good brown side of the pancake before turning it in the pan.

Ingredients
  • 100 grams soy yogurt sugar-free
  • 30-35 grams Ultra fine oats Oats flour
  • 5 grams chia seeds
  • 15 grams peanut flour or powdered peanut butter
  • water/milk until it reaches a smooth mixture (pancakes-like)

Ingredients
  • 100 grams soy yogurt sugar-free
  • 30-35 grams Ultra fine oats Oats flour
  • 5 grams chia seeds
  • 15 grams peanut flour or powdered peanut butter
  • water/milk until it reaches a smooth mixture (pancakes-like)
Instructions
  1. In a blender, or using a fork, mix the all the ingredients except the water/milk.
  2. The mixture will turn out really sticky, so gradually start pouring some water/milk into it until you reach smooth enough mixture for pancakes.
  3. Preheat your pancake pan (or a regular pan) until it is completely hot.
  4. Add some coconut oil or zero-calorie spray to prevent sticking.
  5. Form mini pancakes on the pan and wait until you can turn them over without them falling apart. Mine took approximately 4-5 minutes on a side.
  6. Serve with fruits and some more yogurt sweetened with honey. Or choose other toppings of your own preference.
